Apple and cinnamon hot cakes
These apple and cinnamon hotcakes are a really great alternative to traditional pancakes. 

200g plain flour

1 tbsp baking powder

1 tbsp caster sugar

1 egg

275ml milk

4 apples, peeled and chopped into chunks

Butter

1 tbsp sugar

1 tsp ground cinnamon

Vanilla ice-cream and maple syrup, to serve

Combine flour, baking powder and caster sugar then add the egg and milk gradually until you have a thick batter.

Stew the apple with the butter, sugar and cinnamon until soft and keep warm. Melt some butter in a frying pan, then ladle in spoonfuls of the batter. When little holes appear in the mixture, flip over and cook until golden on both sides. Serve with stewed apple, a scoop of vanilla ice cream or a dollop of cream and a generous drizzle of maple syrup.
