Chicken vegetable stew
A very healthy dish to serve up packed with flavour and couldn’t be easier.
 

515g boneless, skinless chicken fillets or thighs

½ tsp smoked paprika

½ tsp salt

½ tsp black pepper

1 tbsp olive oil

1 onion, chopped

3 carrots, coarsely chopped

2 celery stalks, coarsely chopped

200g mixed mushrooms, finely chopped

3 potatoes, peeled and roughly chopped

1 fresh thyme sprig

3 fresh sage leaves

1 small fresh rosemary sprig

200g chopped tomatoes

2-3 garlic cloves, roughly chopped

120g chicken stock

200g tinned sweet corn, drained

Season chicken with the paprika, salt and pepper.

Brown the chicken on both sides in a skillet or frying pan with the olive oil.

Remove to the slow cooker.

Add the onion, carrots, celery, and mushrooms to the pan along with the garlic.

Cook the vegetables for 5 minutes, adding some salt and pepper then add to the slow cooker.

Pour in the potatoes, herbs, chopped tomatoes,chicken stock then add in the corn.

Stir everything together and cook covered, on high for 4 hours.
