Oat and Raisin Cookies
Crunchy, delicious cookies with the goodness of oats and rasins for growing children.

100g raisins

150ml vegetable oil

200g caster sugar

1 egg, beaten

1 tsp ground cinnamon

1 tsp vanilla extract

140g plain flour

¼ tsp bicarbonate of soda

300g oats

Preheat oven to 180°C/350°F/Gas 4.

Line a baking tray with a sheet of baking paper.

Pour 50ml boiling water over the raisins and leave to soak for 20 minutes.

Drain the raisins, reserving the soaking liquid.

Beat together the oil, sugar and egg.

Add in the reserved water from the raisins, cinnamon and vanilla extract.

Sift the flour and bicarbonate of soda into the bowl.

Add the oats and the raisins and mix together well.

Drop heaped tablespoons of the dough onto the baking tray, leaving enough space for them to expand.

Repeat until all the dough is used up, using a second baking tray if necessary.

Bake for 15 minutes.

Remove from the oven and leave to cool on a wire rack before serving.
