Paleo banana bread
Lovely banana bread, suitable for Paleo diets.

115g butter

3 tbsp maple syrup

3 ripe bananas, mashed with a fork

4 eggs

1 tsp vanilla extract

100g ground almonds

100g coconut flour

1 tsp bicarbonate of soda

1 tsp cinnamon

Pinch of salt

Preheat oven to 180°C/350°F/Gas mark 4.

Mix together butter, maple syrup, mashed bananas and eggs.

Stir in vanilla extract.

Fold in grounds almonds, coconut flour and bicarbonate soda.

Add cinnamon and pinch of salt.

Transfer to prepared cake tin.

Bake for around 45 mins.
