Turkey burgers

Turkey burgers
Low in fat, these healthy light burgers can be made and frozen ahead of time.
 

500g turkey mince

½ tsp dried thyme or 2 tsp fresh

1 lemon

1 small red onion, thinly sliced

2 tbsp chopped parsley

2 tsp olive oil

2 tsp wholegrain mustard

1 cucumber, peeled into ribbons

1 red chilli, deseeded and finely sliced (for the adults, optional)

Sesame seed buns, to serve

Tip turkey into a bowl with the thyme.

Finely grate in the zest from the lemon and add a little seasoning.

Use your hands to mix the ingredients, then shape into patties.

Chill until ready to cook. Can be frozen for up to 1 month at this point.

To make the dressing: In a bowl, mix the juice from ½ the lemon, onion, parsley, oil and mustard and whisk.

Place all of the vegetables into a bowl (with the exception of the chilli) and pour over the dressing to coat well.

Grill, the burgers for about 6 minutes each side and serve with the vegetables either on the turkey burger or on the side.
