Cookies are one of our favourite go-to recipes whenever we feel a sweet tooth craving coming on. Not only are they incredibly quick and easy to make but they’re also super versatile, meaning there’s a cookie recipe for every occasion.
Right now we’re in the mood for something a bit different which is why we opted for this decadent biscuit recipe, which makes the perfect midweek treat.

Ingredients:
115g butter
225g apple sauce
2 tbsp apple juice
100g Demerara sugar
1 tsp bicarbonate of soda
1 tsp almond essence
60ml boiling water
115g rolled oats
280g plain flour, unsifted
Pinch of salt
55g plain chocolate chips
Method:
Preheat the oven to 180°C
Grease a large baking tray
Mix the apple sauce, apple juice, butter and sugar in a food processor until the mixture is light and fluffy.
Mix together the bicarbonate of soda, almond essence and water, and then add to the apple mixture in the food processor. In another bowl, combine the oats, flour and salt and stir gradually into the apple mixture and beat well. Transfer to a large bowl and stir in the chocolate chips.
Using a tablespoon, make 24 rounds on the baking tray. Transfer to the oven and bake for 15 minutes. Remove from the oven and allow to cool on a wire rack before serving.
