Vegetable Biryani is one of the tastiest – and easiest – rice meals out there, and it goes down well with both adults and kids.
Of Indian/ Pakistani origin, it’s become popular on this side of the world thanks to the rise of exotic restaurants, which is great because it’s super healthy and filling too.
Here’s how to make it…
Ingredients:
250g basmati rice
400g special mixed frozen veg
1 veggie stock cube
2 tbsp Korma curry paste
Handful of raisins
Handful of roasted, salted cashew nuts
Method:
1. Boil the kettle. Put the rice, veg and raisins into a large bowl suitable for the microwave.
2. Pour 600ml / 1 pint of boiling water over the rice mixture.
3. Break the stock cube over it, then stir in the curry paste.
4. Cover the bowl with cling film, leaving a bit of a gap at the side to let the steam escape. Cook on full power (850 watts) for about 12 minutes.
5. Remove and leave it stand, still covered, for about five minutes. If you don’t give it time, the rice will be too fluffy. Scatter with cashews, et voila!
