Avocados are often called ‘nature’s butter’, and for good reason. Can you think of another fruit that’s as creamy and unctuous as our beloved avos? Because we certainly can’t!
So of course it’s only right these delectable fruits be whizzed into a thick and indulgent ice-cream, especially now we’re finally entering summer.
Trust us, after trying a scoop of this rich yet healthy dairy-free avocado ice-cream, it’s going to become your go-to summer treat.
You will need:
Serves 4-6
4 avocados
Half teaspoon vanilla extract (add more to taste)
400ml light coconut milk
Squeeze of lime
120g honey
Dark chocolate chips (optional)
Method
1. Remove stone and scoop the avocado ‘flesh’ from shell
2. Place the flesh in the blender
3. Add the coconut milk, honey and lime
4. Whizz up until you get a lovely creamy consistency
5. If you’re using chocolate the chips, fold them in after blending
6. Pour mixture into a plastic container or tray and freeze for around two hours.
7. Scoop the ice-cream onto a waffle cone or spoon into a bowl with pecans or caramelised banana
