When it comes to packed lunches, it can be hard to think of new and exciting ideas for the kids.

But when they have dietary limitations, it can be a constant battle just to find things they can eat.

Many of us are parents to kids with celiac disease, and while it has become easier to shop for, it is still a challenge.

Symptoms of celiac disease can vary from person to person and can start at any age.

If you have suspicions your child might be celiac; decreased appetite, delayed growth, swollen tummy and chronic diarrhoea or constipation are all signs to keep an eye out for.

If you notice your child is suffering with any of these symptoms, you should take them to their doctor for a simple blood test, which will tell you for certain.

If the tests are positive, amending their diet will be an immediate concern.

However, it doesn’t have to be as difficult as you think.

We’ve found some amazing lunch ideas that are both tasty and totally gluten free.

1. Crustless broccoli and cheddar quiche muffins

This recipe is the perfect way to make the most of your leftovers.

Any leftover veggies from dinner can be added to this tasty and easy dish.

And what’s even better is that they can be frozen to keep for lazy days when you couldn’t be bothered to make something else.

2. Broccoli and cheese nuggets

With just a few simple ingredients, you can put together these tasty treats, perfect for their lunchbox.

Add extra seasoning or veggies as you see fit, but the outcome will always be the same – delicious!

Again, pop these in the freezer to keep for a rainy day, so you’re always covered.

3. Rice cakes with dried fruit sprinkles

It couldn’t get much easier than these tasty rice cakes.

You’ll easily find all the ingredients in your kitchen cupboard, all that’s left to do is bang this easy lunchbox filler together and you’re done.

We’re guilty of making up a few extras for ourselves – because why not?

4. Banana, coconut and blueberry muffins

It’s nice to feel like you’re getting a treat, even if what you’re eating is full to the brim with healthy goodness.

These delicious muffins are the perfect example of that.

Make up a batch of these at the start of your week and pop them in their lunchbox every morning as their sweet treat.

5. Avocado tuna salad

This recipe is another extremely simple lunchbox filler.

Not only is the list of ingredients short, but the list of instructions too.

We love quick and easy snacks that are also good for our kids, and this recipe is just that.

6. Pizza twists

We’ve often sent our little ones off to school with one of these missing from their lunchboxes – what can we say, they’re gorgeous!

You might think this recipe is a little more laboursome, but you’d be surprised how easy this is.

Again, add any extras you’d like to create what is sure to be their new favourite lunch.
