What is a chiffonade and how to I do it?

A chiffonade is when leafy greens such as basil, spinach, lettuce or sorrel are cut into ‘rags’ and made to look like ribbons. This is very commonly used in French cooking as a garnish.
 
 
  • Rinse and dry your leaves
  • Gather the leaves into a stack with the largest leaves on the outside and the smaller leaves on the inside
  • Roll the stack tightly together, making them look like a cigar.
  • Finely slice the roll into ribbons
  • Separate these cut leaves into pieces
  • Use as garnish
