It doesn't matter how many people you are cooking for on Christmas Day, you always end up worrying that there won't be enough food to go around. Of course, once Christmas dinner is done and dusted, you realise that you have enough roast bird to feed an entire army!


Never fear over your turkey going to waste, however - we have some delicious ideas for making the most of your extra meat.



1. Turkey burgers
These work best if you mince your turkey meat. Shape them into patties as you would with your mince meat, adding a little tomato sauce for flavour. Toss them on the pan or grill them, then load on the sauce and salad and smack them in a bun - delicious and simple.

 



2. Turkey curry
There's a reason why Bridget Jones' mother's turkey curry buffet was such a hit! Turkey is a great alternative to chicken in a curry, and the dish will go down well with a crowd, especially after a few days of roast dinners and sandwiches - perfect if you're throwing a New Year's party.

 


 

3. Turkey & cranberry mince pies
A savoury twist on the festive classic, these will be devoured by everyone in sight. Swap your sweet pastry for shortcrust, and fill with shredded turkey and cranberries for a tasty party snack.

 


 

4. Turkey casserole
It's a universal tradition - when there's meat and veg in the fridge to be used up, it's time to get the casserole pot out! If you've got some leftover veg that is due to be used up, use this as a base with your shredded turkey, and work up your own concoction. Perhaps you'll create a creamy casserole using sour cream and cheese, or you'll add a crunch by topping with breadcrumbs - anything goes, and a hearty meal is guaranteed.

 


 

5. Christmas club sandwiches
When you've got a fridge full of food to use up, you might as well go all-out with a club sandwich. Stack it high with turkey and a complementary meat, adding some cranberry sauce to make it nice and moist. And don't forget the Swiss cheese - always a great pairing with turkey.

 


 

6. DIY festive pizza
After all of those roast dinners, you're probably craving something a little lighter and different, and a homemade festive pizza is just the remedy. Either buy the base in advance, or create a pastry version yourself. Then, spread on a layer,of tomato purée, shredded turkey, and your cheese and vegetable toppings of choice. A little sprinkling of crushed rosemary will compliment the turkey and add a kick of flavour.

 


 

7. Turkey & cranberry enchiladas
Another catch-all that everyone will love, this will go down a storm after those heavy roast dinners and sandwich stacks. Opt for more flavoursome cheese and vegetables to really bring out the flavour of the turkey, and to complement the sweetness of the cranberries. Again, throw everything in - the more ingredients, the better the flavour, and the meatier the morsel.
