Banana bread is good for pregnant women, study reveals

According to Instagram, banana bread has been revealed as the official snack of lockdown. In fact, Google Trends reveals that search interest for banana bread has increased by a massive 733 percent since February, showing just how popular this humble bake has become. 

Humble it may seem, but banana bread is actually a very enriching snack for mums-to-be, thanks to its high levels of vitamin B12. Both banana skins and eggs contain this essential nutrient which plays a key role in activating folate in the body. Folate is used by the body to maintain and repair blood vessels and so is particularly important in periods of growth such as pregnancy.

Ingredients

  • 250g plain flour

  • 80g caster sugar

  • 1 tsp baking powder

  • 5g bread soda (pinch)

  • 80g low-fat spread

  • 2 bananas

  • 2 eggs

Method

  1. Preheat the oven to 200°C (180°C for fan oven).

  2. Line a loaf tin with greaseproof paper.

  3. Sieve the flour, sugar, baking powder and bread soda into a large bowl.

  4. Rub in the low-fat spread with your fingertips until mixture resembles breadcrumbs.

  5. On a plate, peel and mash the bananas with a fork.

  6. Beat the eggs together in a small bowl.

  7. Make a well in the centre of the flour mixture and add in the banana and egg.

  8. Beat with a fork, drawing in the mixture from the edges until well mixed.

  9. Pour the mixture into the bread tin and bake for 50 minutes or until risen and golden.

  10. Remove from oven, test that it is fully cooked by inserting a sharp knife or metal skewer, if it is clean when removed then the insides are cooked if not, return to oven for 5 more minutes.
