Bacon meatloaf

This is a great family meal that will leave everyone full.
1 tbsp olive oil
1 onion, chopped
1 clove garlic, minced
2 tsp salt
1/4 tsp nutmeg
2 eggs
120ml milk
225g tomato sauce
115g bread crumbs
2 pounds meat-loaf mix, you can get your butcher to prepare this for you
4 rashers
9X5 inch loaf pan
Preheat oven to 180°C or gas mark 4.
Pour your oil into a large pan and heat over a medium temperature.
Gently cook your onion and garlic until soft. Add in your salt and nutmeg. Stir before removing from the heat.
In a large bowl beat your eggs together and pour in your tomato sauce and breadcrumbs. Combine together before adding in your meat-loaf and onion mix.
Spoon into a loaf pan and lay your rashers on top.
Place in the oven for 80 minutes. Make sure it is thoroughly cooked before removing.
