Bologna burger

For the burger

100g minced pork

100g minced veal

100g minced beef

Salt, freshly ground black pepper

For the tomato relish

2 beef tomatoes, core and seeds removed, flesh diced

1 red chilli, seeds and pith removed, chopped

2 cloves garlic, 1 finely chopped, 1 crushed

1 tbsp olive oil

pinches sugar

1 tbsp chopped, fresh oregano

For the barbecue sauce

1 tbsp soy sauce

1 tbsp honey

2 tbsp ketchup

4 drops Worcestershire sauce

To serve

1 Spanish white onion, sliced into rings

1 Iceberg lettuce

handfuls gherkins

ogle shield cheese

2 burger buns

Making the burger: In a bowl, combine the minced pork, minced veal and minced beef together. Sprinkle generously with salt and black pepper. Wet your hands and shape the mixture into 2 burgers.

Making the tomato relish: Put the diced tomato, chilli and garlic clove in a bowl and mix well. Stir in the olive oil, sugar, oregano, salt and pepper. Leave it to rest for about 15 to 20 minutes.

Making the barbecue sauce: In a small bowl, stir the soy sauce, ketchup, Worcestershire sauce and honey together. Mix in the crushed garlic.

Preheat the barbecue. Grill the patties until the meat is cooked through, which should take 3 or 4 minutes on each side. Within the last minute of grilling, top the burgers with the slices of cheese. Warm the buns on the barbecue for about 1 minute.

Lay the base of the buns on serving plates. Cover with 1 tablespoon of barbecue sauce then top with the lettuce leaves, the burger, onions rings, sliced gherkins and finally the tomato relish. Spread some more barbecue sauce and cover with the top of the buns.
