Butter icing

200g icing sugar

150g butter

Few drops vanilla extract

Beat the butter for 5-8 minutes using a food mixer.  It should be really, really creamy. 

Sieve in the icing sugar and mix for another 5 minutes.  

Add in the vanilla extract.  This is the time to add food colouring if you want to colour your icing. 

Mix one last time.

It is possible to make this the day before using.  Keep it in a covered bowl in the fridge and when you want to use it, beat for 5 minutes again.
