Caramel cupcakes
An easy and tasty recipe!

175g butter, softened

175g caster sugar

2 tsp vanilla extract

3 eggs

175g self-raising flour

For the icing

225g butter, softened

225g icing sugar

225g caramel sauce

50ml milk

Preheat the oven to 180°C.

Whip the butter and sugar together until pale and fluffy.

Add the vanilla extract and the eggs and whip again. Add the flour and mix until it is smooth. Divide the mixture into 15 cupcake cases.

Bake for about 20 minutes and let cool completely.

Meanwhile, make the buttercream. Whip the butter until pale and fluffy, about 5 minutes. 

Add the icing sugar and whip for another 3 minutes. Add the caramel, milk and whip until smooth. Spoon into a piping bag and use to decorate the cupcakes. Add sugar sprinkles if desired.
