Cheddar & thyme bread

This bread is not only delicious but is surprizingly easy to make
230g self raising flour
Level tsp dry mustard
1 tbsp caster sugar
50g butter
1 tsp fresh thyme
125g grated cheddar cheese
150ml milk
1 beaten egg
Preheat the oven to 180°C / 350°F / Gas Mark 4 and lightly grease a 2lb loaf tin.
Mix the flour, mustard and sugar in a large mixing bowl. Rub in the butter using your fingertips until the mixture resembles fine breadcrumbs.
Add thyme and grated cheese and mix well.
Add the milk to the beaten egg and add to the dry ingredients. Stir until just moistened – the mixture will be very thick.
Transfer to the prepared loaf tin and bake for 35 to 40 minutes. You will know it is cooked when the underneath is tapped and has a hollow sound.
Cool in tin for 10 minutes and then transfer to a wire rack to fully cool.

The second time our recipe tester made this bread she added a table spoon of wholegrain mustard and it tasted great!
