Chickpea and chicken salad

Salads don't have to just be a bowl of lettuce. This chickpea salad contains chicken and cherry tomatoes for a lovely filling lunch.
2 tsp olive oil
1 chicken fillet, finely cut
1 onion, peeled
1 red chillies, deseeded
2 tsp lemon juice
Pinch salt
400g tinned chickpeas, drained, or around 4 large handfuls of soaked and cooked chickpeas
2 handfuls cherry tomatoes
1 handful fresh basil, finely ripped
Heat 1 tsp oil in a frying pan and gently cook your chicken for 8 minutes. Remove and set aside.
While the chicken is cooking, combine your onion, chillies, lemon juice and the rest of the oil in a bowl. Season with the salt.
Pour the chickpeas into the pan to heat them up. Return the chicken to the pan and add the onion mix. Cook for a further minute.
Pour into a serving bowl and add the cherry tomatoes. Season with sweet chilli sauce, if using.
Garnish with the basil.
