Chocolate Marquise

A no-bake chocolate cake that is pure scrumptiousness.
7 eggs yolks
250g icing sugar
125g semisweet chocolate, melted
175g cocoa powder
150ml strong coffee, at room temperature
350g Connacht Gold Unsalted Butter, at room temperature
400ml cream
In a large mixing bowl, beat the egg yolks with the icing sugar until pale, then add the melted chocolate.
In another bowl, mix the cocoa powder, the cup of coffee and the butter. Combine the two mixtures.
Whip the cream until it forms stiff peaks and fold into the main mixture.
Line a loaf pan with parchment paper and pour the mixture into the pan. Refrigerate for at least 24 hours. Dust with icing sugar and serve in slices, with a dollop of custard if desired.
