Christmas pudding and ice-cream sundae

A lovely way to use up leftover Christmas pudding.
200g Christmas pudding (leftover)
6 tbsp cranberry sauce
1 splash of red wine
500ml vanilla ice-cream
1 handful flaked almonds, toasted
Place a saucepan over a medium heat and crumble in your Christmas pudding.
Continue to fry and stir until a little crispy.
In a separate pan over a low heat add the cranberry sauce and a splash of red wine, continue stirring as you heat the sauce through.
Divide half of the pudding between 4 glasses or bowls.
Add a spoon of vanilla ice-cream on top of the pudding. Drizzle over the hot cranberry sauce and a sprinkling of flaked almonds.
Divide the other half of the Christmas pudding between the glasses and top again with another spoon of ice-cream, cranberry sauce and flaked almonds.
