Cinnamon buns

Water – 155g



Strong Flour – 400g

Salt – 5g

Butter – 40g

Yeast – 20g

Caster Sugar – 40g

Eggs ‐ 50g

Milk Powder – 20g


Sugar – 200g

Cake Crumbs – 50g

Cinnamon – 20

Egg – 50g


Place flour, salt and butter in a mixing bowl and rub butter through flour & salt.

Place the yeast, caster sugar, eggs, milk powder and water in a bowl and whisk together.

Add to the dry ingredients and mix all to a soft dough.

Set aside covered for 20 minutes.

Using a rolling pin roll out into a rectangular shape 40 x 20cm


Place the sugar, cake crumbs, cinnamon and egg in a bowl and mix well.

Spread the filling evenly on to the dough.

Roll the dough (like a Swiss roll) and cut into individual pieces place on a prepared baking tray and set aside to prove (35 – 40 minutes)

Bake at 190 C (25 to 30 minutes) – glaze with boiled apricot jam and serve.
