Creamy carbonara
A delicious pasta for two, oozing with flavour.
 

500g spaghetti

275g cubed bacon lardons

2 tsp olive oil

60ml dry white wine (or vermouth)

4 large eggs

50g parmesan cheese (freshly grated)

Black pepper

60ml double cream

Freshly grated nutmeg

Put a large pan of salted water on and bring to the boil.

Cook the bacon lardons in the oil until crisp.

Add the white wine or vermouth and let it bubble until there is have a syrup left.

Remove the pan off the heat.

In a bowl, beat together the eggs, Parmesan, cream and some pepper.

Cook the pasta according to the directions less 2 minutes to ensure it comes out aldente.

 Lower in a cup and remove approximately 125ml of the pasta water before draining.

Put the pan with the bacon cubes, on the heat and add the drained pasta, tossing well to coat with the syrup.

Add a little of the reserved pasta water to give it gloss and smoothness.

Take the pan off the heat again, add the eggs and cheese mixture, quickly tossing everything to mix.

Grind over some more pepper and grate over the nutmeg, and serve.
