Easter biscuit lollies
Have fun making these beautiful versatile gifts for the kids during Easter.
 

140g butter

100g light soft brown sugar

3 tbsp golden syrup

½ tsp vanilla extract

350g plain flour, plus extra for dusting

1 tsp bicarbonate of soda

1 large egg

For the icing

Food colouring

1kg ready-to-roll icing

Icing sugar, for dusting

Chocolate sauce

Edible balls, or glitter

Preheat the oven to 200°C / 400°F / Gas mark 6.

Line 2 baking trays with greaseproof paper and set aside.

Melt the butter, sugar and syrup in a small saucepan.

Mix in the vanilla then remove from the heat and leave to cool for 10 mins.

Sieve the flour and bicarbonate of soda into a bowl.

Pour in the butter mixture, add the egg and stir together to form a dough.

Chill in the fridge for 10 minutes. Roll out the dough on a floured surface to 5mm thick, then use a round cutter to for the biscuits.

Poke a lollipop stick into the bottom of each biscuit, then bake for 12 minutes until golden.

Add food colouring into lumps of fondant icing and knead.

Roll out on a surface lightly dusted with icing sugar, then use the cutter to cut out matching shapes.

Decorate the biscuit lollies with the icing and roll into the glitter or colourful edible balls.

If they are going to be made into gifts, gently wrap them in cellophane perhaps with a small ribbon to tie them off.
