Garlic and chilli focaccia bread
An Italian bread topped with garlic, chilli and herb butter.

4 garlic cloves, crushed

1 large red chilli, finely chopped

100g butter, softened

1 small bunch flat-leaf parsley, finely chopped

2 sprigs rosemary, needles chopped + 1 as garnish

1 large focaccia loaf

Preheat the oven to 200°C / 400°F / Gas mark 6.

Line a baking tray with greaseproof paper and set aside.

Mash the garlic, chilli, parsley and rosemary into the butter.

Season well with salt and pepper then spread over the focaccia loaf.

Bake for 10 minutes until crispy then cool and serve with a sprig of rosemary if desired.
