Gingerbread latte
A deliciously Christmassy latte 

200ml water

200g granulated sugar

6cm piece of fresh ginger, peeled and crushed

2 cinnamon sticks

1 tsp ground nutmeg

15ml pure vanilla extract

500ml hot espresso

500ml hot milk

250ml heavy whipping cream

50g brown sugar

Cinnamon for sprinkling

Combine the water, granulated sugar spices and vanilla in a small pan over medium high heat.

Bring spice mixture to a boil and heat until the sugar is completely dissolved.

Reduce the heat and simmer until liquid reduces by one third, approximately 20 minutes.

Remove pan from heat.

Beat heavy cream until soft peaks form; beat in brown sugar until cream is stiff.

Pour the espresso evenly into four mugs and add 75ml of the gingerbread syrup.

Top the coffee off with equal portions of heated milk.

Garnish latte with whipped cream and sprinkle with cinnamon.
