Greek pita burgers

Greek pita burgers

Olive oil
1 red onion, diced
1 tsp ground coriander
2 tsps ground cumin
2cm piece of ginger, grated
2 garlic cloves, crushed
1 pound minced lamb
2 tbsp minced fresh parsley
3 tablespoons minced fresh mint
1/2 teaspoon sea salt

Tzatziki sauce
Shredded lettuce
Diced Tomato
Pitas

Add 2 tsps of olive oil to frying pan.

When hot, add the onions and cook for 3-4mins over a medium heat until soft.

Add in the grated ginger, coriander, cumin and garlic. Cook for an further minute and then allow to cool slightly.

In a bowl, mix the ground lamb with the onion and spice mixture. Add in the fresh parsley, fresh mint and sea salt and work with your hands until it’s mixed thoroughly.

Shape the lamb into 4-5 burgers and allow to rest and chill in the fridge for 15 minutes.

While the burgers are settling, make your Tzatziki sauce.

Add some oil to your frying pan and when the oil is hot, add the lamb patties. Cook each of the burgers for 3-6 minutes per side, depending on how well you want them to be done. If your pan is not big enough to fit all the burgers comfortably, do not overcrowd the pan. Either cook in two separate pans or cook in two batches and keep burgers warm in the oven.

Heat your pitas and assemble your burgers.
