Peanut butter fudge

Peanut butter fudge
This is an easy sweet treat or gorgeous gift.

125g butter
120ml milk
500g dark brown sugar
1 vanilla pod, seeds only
250g crunchy peanut butter
300g icing sugar

Melt the butter in a pan over a medium heat.

Mix in the milk and brown sugar and bring to the boil for 3 minutes, without touching or stirring.

Remove from the heat and mix in the vanilla seeds and peanut butter

Place the icing sugar in a large mixing bowl and pour the sugar / hot butter on top. Using a wooden spoon, beat the mixture until smooth.

Spoon  into a 20cm (8”) square baking tray and set aside to cool a little before placing in the fridge to chill completely.

Cut the fudge into squares with a sharp knife, turn out of the tin and store in an airtight container.

Level of Difficulty

You will achieve a deeper darker fudge using the dark brown sugar - if you want a lighter fudge use a golden sugar instead.
