This reuben sandwich is packed full of cheese and corned beef for a truly hearty lunch.
3tbsp butter
8 slices wholemeal bread
12 slices corned beef
8 slices Swiss cheese
140g sauerkraut, drained
1 pickle, quartered
Preheat the grill to a medium temperature
Lightly butter the bread on one side. Layer the sauerkraut, 3 slices of beef and 2 slices of cheese on one piece of bread.
Top with another slice of bread, leaving the butter side up.
Place the sandwiches under the grill for about 10 minutes until they are golden.
Cut in half and serve with a pickle.
