Spanish omelette with chorizo

This is the real spanish omelette recipe. Tortilla de patatas is the most famous tapa in Spain, and you'll be able to find it in almost every bar. Recreate the taste of your holidays at home with this inexpensive meal.
3 onions, sliced
675g rooster potatoes, peeled and thinly sliced
110g chorizo sausage, sliced
6 large eggs, beaten
Salt and pepper
Heat a non-stick frying pan.
Add the chorizo and fry for 2 minutes (don't worry about not having oil in the pan as the chorizo will release lovely oils once it hits the heat. Remove from the pan and set aside.
Add the onions and potatoes to the same pan and fry for 8-10 minutes or until tender and golden.
Put the chorizo back in with the potatoes and onions. Shake the pan until there is an even layer across the base of the pan.
Beat the eggs with seasoning, pour into the pan, cover and cook over a medium heat for 5 minutes until the eggs begin to set.
To finish, cook the omelette under a hot grill for 2 minutes or until all the egg has set and top is brown.
Serve with rocket salad with light olive oil and balsamic dressing.
To serve as tapas, serve in wedges on small plates.
