Christmas trifle

Easily made, this declicious recipe is a triumph.
3 oranges
1 tbsp demerara sugar
2 tbsp Grand Marnier
300g leftover Christmas pudding
500g custard
250g mascarpone
284ml pot double cream
Handful flaked almonds, toasted
Dark chocolate, grated
Star anise, for decoration (optional)
Peel the oranges ensuring all the pith is removed.
Slice a thinly and arrange over a large plate.
Sprinkle with the sugar followed by the Grand Marnier and set aside.
Crumble the Christmas pudding into large pieces and scatter over the bottom of each of the trifle serving glasses to be used.
Lift the oranges into the glasses in a layer and pour over any juices equally among them.
Alternately you can use a large dish for these steps and going forward.
Beat the mascarpone until smooth, then stir in the custard.
Spoon the mixture over the top of the oranges.
Whip the cream and spoon over the custard.
Sprinkle with the flaked almonds and chocolate.
Decorate with star anise if desired.
Chill until ready to serve.
