Apple and cinnamon hot cakes
These apple and cinnamon hotcakes are a really great alternative to traditional pancakes. 

200g plain flour

1 tbsp baking powder

1 tbsp caster sugar

1 egg

275ml milk

4 apples, peeled and chopped into chunks

Butter

1 tbsp sugar

1 tsp ground cinnamon

Vanilla ice-cream and maple syrup, to serve

In a large bowl, combine flour, baking powder and caster sugar then add the egg and milk gradually until you have a thick batter.

To make the stewed apples, cook the apples with the butter, sugar and cinnamon until soft and keep warm.

When ready to make the pancakes, melt some butter in a frying pan, then ladle in spoonfuls of the batter.

When little holes appear in the mixture, flip over and cook until golden on both sides.

Serve with the stewed apple, a scoop of vanilla ice cream or a dollop of cream and a generous drizzle of maple syrup.
