Avocado and salmon canapés
These canapes are great for nibbles at dinner parties or as a starter. They are also incredibly easy to make.

1 ripe avocado, halved and pitted

5 tbsp mayonnaise

Juice of half a lemon, cut the other half of the lemon to garnish the canapés if you want

Pinch salt

5 slices thick brown bread

5 slices smoked salmon, halved

Handful fresh dill to garnish

Start by making the avocado mayonnaise. Cut the avocado in half and scoop out the inside into a small bowl.

Spoon in the mayonnaise and combine together well. Add the lemon and salt. Use a hand held blender to get rid of lumps.

Use a cookie cooker to cut circles into brown bread. You should probably get two circles from each slice of bread.

Generously spread the avocado mayonnaise onto the bread rounds. Top with the smoked salmon, lemon slice (if using) and garnish with the dill
