Baked chicken and goat's cheese with cherry tomatoes
A great meal for having friends around, with easy ingredients that go perfectly together.
 

2x 610g part boned chicken breasts

250g firm goat's cheese, sliced

Handful fresh thyme

2x 500g cherry tomatoes, halved

Olive oil

Splash white wine

85g parmesan cheese, grated

Basil leaves, for garnish

Preheat the oven to 190°C / 375°F / Gas mark 5.

Loosen the skin from the chicken breasts and stuff each with a slice of the goat’s cheese and a sprig of thyme. Put in a shallow ovenproof dish.

Scatter the cherry tomatoes around the chicken with a few more sprigs of thyme, a drizzle of olive oil and splash of white wine. Season with pepper and half of the parmesan cheese.

Bake for 25-30 minutes or until the chicken is tender and golden.

Sprinkle the remaining parmesan cheese over each portion and serve with basil leaves.
