Beef and dumplings stew

This easy beef and dumpling stew is a great heart warming dish.
2 tbsp olive oil
25g butter
750g beef, diced
2 tbsp flour
1 garlic clove, crushed
3 onions, peeled, roughly cut
4 large carrots, roughly chopped
500ml beef stock
3 tbsp thyme
3 tbsp chopped fresh parsley, 1 tsp to garnish
Salt and pepper to season
125g plain flour
1 tsp baking powder
60g suet
Water, to make a dough
1 tbsp chopped parsley
Preheat oven to 180°C/ 350°F/ gas 4
Heat the oil and butter in a large pot and cook the beef on a medium temperature. Sprinkle in the flour cook for a further 3 minutes. Add the garlic, onion and carrots and cook for 1-2 minutes.
Stir in the stock, thyme and parsley. Season with salt and pepper.
Transfer to an ovenproof dish, cover with a lid and place in the oven for two hours.
While the beef is stewing you can make the dumplings. Sift the flour, baking powder and a pinch of salt into a bowl. Add the suet and enough water to form a dough.
Turn the dumplings onto a clean surface and roll into medium sized balls. Leave and set aside until ready to use.
About 20 minutes before your stew is ready, place the dumplings on tops. Leave off the lid to let the dumplings go golden.
To serve sprinkle with chopped parsley.
