Blue cheese and walnut toasts

If you want a delicious side to accompany a soup or salad, then look no further. These delicious little toasts are a dream.
1 small baguette, cut into thick slices
50g butter, melted
100g crumbled blue cheese
4 tbsp chopped walnuts
Fresh chives to serve
Sprinkle of paprika, for decoration (optional)
Preheat the oven to 200°C / 400°F / Gas mark 6. Line a baking tray with greaseproof paper and set aside.
Brush one side of each slice of bread with melted butter, and place butter side up on a baking tray.
Bake for 7 minutes, or until lightly toasted.
In a small bowl, use a fork to cream the blue cheese a bit then add some pepper.
Spread this mixture over the tops of the toasted bread slices, then sprinkle with chopped walnuts.
Bake for 5 minutes or until the topping is melted and bubbly.
Top with long slivers of chives and enjoy with a nice bowl of tomato or with a salad.
