Blueberry and lemon cake

Blueberry and lemon cake
This is a quick moist cake that combines lemon and berries beautifully.
 

75g butter, melted

200g caster sugar

1 lemon, juiced

2 eggs

200g plain flour

1 tsp baking powder

½ tsp salt

120ml milk

2 tbsp lemon zest

150g fresh blueberries

Lemon Drizzle

2 tbsp lemon juice

4 tbsp caster sugar

Preheat the oven to 180°C / 350°F / Gas mark 4.

Grease and flour a loaf tin. In a medium bowl, mix the flour, baking powder and salt together and set aside.

In a large bowl, cream the butter and sugar until light and fluffy.

Add the eggs, and beat well.

Mix in the lemon juice.

Add the flour mixture, alternating with the milk.

Fold in the lemon zest and blueberries.

Pour into prepared loaf tin.

Bake for 60 to 70 minutes, or until a skewer inserted into the cake comes out clean.

For the lemon drizzle, combine 4 tablespoons of sugar with 2 tablespoons of lemon juice.

Drizzle over the cake while still warm then slice and serve.
