Brioche french toast with blueberry compote

This is a really heavenly recipe for brunch.
2 eggs
4 tbsp milk
1 tbsp caster sugar
A drop of bvanilla extract
4 slices of thick brioche
Butter, for frying
Vanilla ice-cream, to serve
For blueberry compote:
100g blueberries
1 tbsp maple syrup/ 1 tbsp caster sugar
A squeeze of lemon juice
Add all the ingredients for the compote to a saucepan. On a gentle heat, cook the blueberries until they begin to ooze and then simmer for 2-3 minutes until they form a jam.
For the French toast, combine the eggs, milk, sugar and vanilla extract until the sugar has melted. Dunk the bread in the egg mixture, ensuring it is thoroughly coated. Fry slices of the bread in the butter until golden brown on both sides. Serve with a scoop of vanilla ice cream, if desired and a generous dollop of blueberry compote.
