Bruschetta

Bruschetta
This bruschetta requires mimimum effort and is perfect for entertaining or just as a light snack

1 loaf ciabatta, cut into thick slices

Extra virgin olive oil

3 cloves of garlic, halved

300g cherry tomatoes, chopped

1 pinch dried chilli flakes (optional)

1 handful fresh basil leaves, roughly torn

Salt and black pepper

Place the slices of ciabatta into a dry griddle pan and cook for 1-2 minutes on each side. Drizzle olive oil over each slice of ciabatta and then rub each slice with the halved garlic

Combine the rest of the ingredients in a bowl, drizzle with olive oil and season with salt and pepper to taste.
