Brussels sprouts with pancetta

1kg brussel sprouts stalk and outer leaves removed

100g thinly sliced pancetta (or streaky bacon), cut into 2cm strips

4 tbsp. hot goose fat (approx)

1 tsp. Goodall’s garlic paste

½ tsp. Goodall’s dried sage

Blanch the brussel sprouts in a pan of boiling salted water for 3 minutes.

Drain and tip into a bowl of iced water to cool quickly. Drain well again and set aside until nearly ready to serve.

Heat a pan and add the goose fat, garlic and sage. Sauté the pancetta in the hot goose fat until crisp. Toss in the sprouts and stir-fry for 2-3 minutes or until lightly charred
