Cathedral City Mature bittersweet bites

200g Cathedral City Mature
125g melted good quality dark chocolate
3 x tablespoons finely chopped decorations of your choice: e.g., dried cranberries, dried mangoes, pistachios.
First, cover a flat baking tray with cling film. This will help to peel the treats off the tray later on without damaging the chocolate coating.
Cut the cheese into small thumb sized wedges and dip the larger end into the melted chocolate.
Dip or sprinkle the dried fruit / nuts over the chocolate part and place on the tray.
Put them in the fridge to set for about 20 minutes. Once set, serve!
These will keep in an airtight tin in the fridge for 48 hours.
