Tomato and feta skewers

Tomato and feta skewers
These skewers are great for a summer barbeque.

12/ 15 cherry tomatoes

200g feta cheese

½ lettuce head

Balsamic vinegar for serving

6 wooden skewers

Preheat the oven to 180°C/ 350°F/ gas 4. Line a baking tray with parchment paper.

Place the tomatoes on the baking tray and place in the oven for 10 – 15 minutes.

While the tomatoes are roasting, cut the feta into small cubes, you should get about 20 - 25 from a 200g pack.

Clean and wash the lettuce. Shred into small sizes.

Remove the tomatoes form the oven and allow to cool slightly.

Simply push a couple of tomatoes, feta cubes and lettuce onto the skewers until all the skewers and ingredients are used up. You can use any pattern you like.

Place on a clean flat plate and garnish with a little balsamic vinegar before serving.
