Cauliflower tots

These cheesy snacks are so delicious that your kid’s will have no idea their main ingredient is cauliflower.
1 whole cauliflower floret, finely chopped and cooked
3 eggs, lightly beaten
1 medium onion, finely chopped
4 tbsp flat parsley, finely chopped
85g parmesan cheese, grated
60g breadcrumbs
1 tbsp chicken stock pot
Olive oil cooking spray
Sweet chili dipping sauce (optional)
Preheat the oven to 180°C / 350°F / Gas mark 4.
Line a baking tray with greaseproof paper and set aside.
Bring a medium saucepan of water to the boil. Add in the cauliflower and the chicken stock cube.
Cook until tender. Drain well.
Make breadcrumbs by pulsing the bread in a food processor.
In a bowl, mix all of the ingredients.
Using a spoon, shape the mixture into croquette shapes and lay on the baking tray.
Continue until all of the mixture is used then place them in the refrigerator for 30 minutes to set.
Once set, spray gently with the olive oil spray on top.
Bake for 20 minutes or until golden.Halfway through cooking, turn the tots over and spray again.
Serve with sweet chilli sauce for dipping, if using.
