Freshly made bread smells delicious and these cheese buns are no exception. Slice them in half and generously apply butter while they are still warm - delicious. 

350g bread flour

1 tsp salt

1 tsp dried yeast

120g cheddar cheese, shredded

1 tbsp lemon zest,

250ml warm water

2 tbsp plain flour

Preheat your oven to 220°C / 425°F / Gas Mark 7. Line a baking tray with parchment.

In a mixing bowl mix half the flour, with the salt and yeast.  It will double in size so make sure the bowl is big enough to accommodate this.

Add the cheese and lemon zest and stir until it is combined.

Pour in the water and the rest of the flour. You should be left with a sticky dough.

Cover with clingfilm and leave to sit overnight.

Dust your work surface with the plain flour and turn your dough out onto it. Use your hands to shape it into one big giant bun.

Then divide into about 10 sections to make your bread buns. Leave to rest for another 30 – 40 minutes.

Place onto your prepared baking tray and place in the oven for about 40 minutes or until cooked. If the buns don’t all fit onto the tray cook them in batches.

Remove from oven and allow to cool on a wire rack.
