Cheesy potato bake

A satisfying dish, which can be made on a budget and please the whole family.
1 garlic (clove), crushed
1 onion, finely chopped
1 tsp vegetable oil
4 potatoes, peeled and chopped
100ml milk
6 tbsp mature cheddar cheese, grated
1 tsp black pepper
Preheat the oven to 190°C / 375°F / Gas mark 5.
Grease a baking dish with a little vegetable oil or butter.
Fry the garlic and onion in the oil until softened.
Boil and then mash the potatoes then combine with half the milk and 4 tablespoons of the cheese.
Season with pepper.
Add in the cooked onions and garlic and mix well with the remaining milk.
Spoon into the prepared baking dish, add the last of the cheese and bake for 20 minutes.
