Chilli and pickle cheeseburger

2 red chillies, seeds removed, roughly chopped
1 large handful flat-leaf parsley, roughly chopped
2 slices white bread, crusts removed
1 egg, lightly beaten
750g minced beef
2 pickled dill cucumber, finely chopped, or 2 tbsp chopped gherkins
6 seeded burger buns
Salt, freshly ground black pepper
125g Blue cheese (e.g. cashel blue) or 6 slices cheddar cheese, crumbled
tomato ketchup or mayonnaise
1 large handful mixed salad
Tear the white bread into pieces and put them in a food processor. Add the chillies and parsley and blend into breadcrumbs. Heat the grill to hot.
Tip the bread and chilli mix into a large bowl. Add the egg, beef pickled dill cucumbers and a large amount of salt and pepper. Stir with a wooden spoon.
Divide the mixture into 6 equal parts. Wet your hands and shape into 1cm thick patties. Cook the burgers under the grill or on a barbecue for about 3-4 minutes on each side. The patties should have a nice brown colour yet stay a little pink in the middle.
Place the bottom of the buns on serving plates. Top with a patty, a slice of cheese and a squeeze of ketchup or mayonnaise. Serve with the mixed salad.
