Chocolate layer cake

A scrumptious cake for chocolate lovers!
For the cake
225g plain flour
300g caster sugar
80g cocoa powder
2 eggs
250ml milk
125ml vegetable oil
2 tsp baking powder
1 tsp bicarbonate of soda
1 tsp vanilla extract
1 tsp instant coffee
For the chocolate icing
200g dark chocolate
200ml double cream
White chocolate shavings, to taste
Preheat the oven to 180°C/350°F/Gas 4. Grease and line two 20cm cake tins.
In a large mixing bowl, place all of the cake ingredients and beat until well combined. Add 250ml of boiling water to the mixture and beat until smooth.
Divide the cake batter between the tins and bake for 30 minutes, or until a skewer inserted into the centre of the cake comes out clean. Let cool completely.
In the microwave or in a saucepan, heat the cream and pour over chocolate. Let the chocolate melt for a minute and then whisk until the ganache is smooth and glossy. Let cool slightly.
Spread a thin layer of icing over one cake and top with the second cake. Cover entirely with icing and top with white chocolate shavings.
