Chocolate truffles
Deliciously decadent chocolate truffles is Christmas in a bite. Offer your friends and family these in little cellophane wrappers tied with ribbons.
 

50g dark chocolate (at least 75 per cent cocoa solids)
½ teaspoon groundnut oil
A little cocoa for dusting
2 tbsp dried coconut, for dusting (optional)

Using a heat proof bowl, melt the chocolate and the oil over hot but not boiling water.

Then remove the pan from the heat.

Layer grease proof paper over a work surface and dusting your hands with the cocoa, roll each truffle into a little ball.

Using two flat skewers, one to spike the truffle and one to manoeuvre it, dip each truffle in the chocolate and or coconut so that it gets a thin coating and then quickly transfer it to the paper.

If the chocolate begins to thicken replace the pan on the heat so that it will liquefy again.

Leave the coated truffles to set completely.

Using a palette knife to quickly transfer them into wrapping.
