Chunky style pasta sauce

Chunky style pasta sauce is great for serving over pasta. As the added vegetables and tomatoes give a nice bite there is no need to include meat if you don’t want to.
1 tbsp olive oil
1 garlic clove, chopped
400g (1 tin) of tomatoes
1 tbsp tomato paste
35g caster sugar
1 red pepper, roughly cut
1 tsp dried basil
1 tsp parsley
Salt and pepper to season
Heat the oil in a saucepan over a medium heat. Gently sauté your garlic for a minute or two.
Toss in your tin of tomatoes and add the tomato paste.
Add the sugar and allow to dissolve stirring all the time.
Add your chopped pepper and throw in your herbs.
Cook gently for 10 minutes until the tomatoes are soft and there are juices in the pan.
Season with a little salt and pepper and serve over pasta.
