Plump and juicy scallops with a citrus Asian infusion is a lovely starter for 2.
12 scallops
2 tbsp grapeseed oil
1 tbsp butter
1 tbsp snipped chives
Dressing
Juice 1 lime
Juice 1 lemon
1 tbsp soy sauce
Whisk together the dressing ingredients and set aside.
Use a non-stick frying pan and heat the oil and butter through. When hot, add the scallops and cook for 2 minutes per side.
Remove from the pan and slice in half horizontally.
Arrange between 2 plates, drizzle some of the pan juices over top, spoon over the dressing and scatter over the chives and serve.
