Cream of potato soup

Delicious and creamy soup, excellent on a cold day.
4 large potatoes peeled and sliced
2 medium onions finely diced
500ml whole milk
Sea salt and freshly ground pepper
Using a heavy based pan, melt the butter.
Add the onions and cook gently until softened but not coloured.
Add the potato to the pan and cook for 2 minute, then add the milk with salt and pepper.
Cook until potato is soft, about 10 minutes.
Use a food processor to blitz the soup until smooth and creamy add the basil over top.
